Rekindling the Christmas Spirit at Publico, Singapore

Located at the Intercontinental Hotel on Singapore’s Robertson Quay, which just re-opened after over a year for staycations, Publico is the inside/outside restaurant concept that has a terrific Christmas menu with plenty of tasty options to meet everyone’s needs and desires. Publico must be one of our favourite restaurants to be in the neighbourhood, so do not miss out on the holidays’ menu! Overlooking the water, it is a great spot to people-watch or enjoys the night with friends and family.

One of the first recognizable changes we felt was that the Singapore government has finally allowed soft, pre-recorded music to be played in eating areas. This has made such a huge difference and the vibe of the place is totally different, much livelier and has a great feel when dining. With a set menu, we sit down and wait for the good stuff to come through.

The Granchio Fritto (S$S22) is an amazing soft shell crab dish that is one of the most popular on the menu. It has tasty sauces and red lettuce is surprisingly good with the crab. I didn’t think that this would be a good combo but it is perfect. Thuymi, the resident seafood lover, absolutely loves the crab and it is gone in minutes.

The Margherita Pizza (Pizza Boscaiola) is the next to come out and compliments the rest of the dish well. It is thinly sliced homemade style. It has porchetta, porcini mushrooms, mozzarella, parmesan with a red wine glaze. We think this is great if you have lots of people, but we really want to maximize eating the other unique dishes.

Probably our most recommended of the night is the Publico mulled wine (S$S25). It is vodka, Sangiovese, anise, cinnamon, cloves, applejack, dark raisin, juniper berries and rosemary dark berries. We love mulled wine but this is a great mix up on tradition. To really top off the drink, they insert a Candied Pear, which tastes absolutely incredible. The combination with the berries makes it one of our must-have items on the menu. And if you have ever been to a European Christmas it will remind you of this.

One of the drinks of choice is the Publico Sling, and it is the hotels’ take on the famous Singapore drink. It is a refreshing drink that cools you down and is perfect for Singapore afternoons and evenings. The little variations the bar staff put on the drink make it special, so good we had to order another.

For all the meat lovers there is the Manzo Arrosto (S$S48). It is a Roasted Angus beef tenderloin, red wine jus, crispy purple potato, bell pepper tartare, mustard seeds and horseradish. This carefully crafted dish is cooked medium and is super tender. The mustard spreads perfectly over the meat and the pepper tartare is something we are trying for the first time.

To finish the night in style, we enjoy a Publico Tiramisu (S$S15). It includes espresso, mascarpone, cocoa, biscuits, coffee liquor and is really a great way to top of the night. We have a share portion so we don’t go overboard, but the serving is perfect for one person.

With both the indoor/outdoor options, great food, music and amazing service, Publico will stuff anyone’s stocking with great choice when deciding where to have a Christmas lunch. Happy Holidays!
